Don't use G-Hub, use the Logitech LGS software. Go to Devices and Printers, right click on the Logitech controller icon, settings, calibrate, test and check all functions. Then open LGS software, check wheel axis properties Sensitivety 50%, 900 degrees, un-tick centering spring, centering strength set to 0 %. Then in AMS2 game options, select the G29 wheel. Calibrate pedals, and wheel. When you calibrate the wheel, go all the way to one side 100%, then go the other direction, all the w ay PAST 0%, then continue to 900 degrees, and save it.

You can drive with assists off (I have a G29).
Try checking your GHUB or Logitech Gaming Software, or like Peter Stefani said, dont use GHUB, use the LGS and adjust it.

I did not have to adjust anything and my G29 with from the get go, so I have no idea of what could be happening, but in case you have Project CARS (1 or 2) installed, it is known for changing your G29 values at REGEDIT.
Try checking at REGEDIT:
https://forum.reizastudios.com/threads/it-looks-like-the-madness-engine-is-changing-registry-values-for-g29.9986/
Go to HKEY_CURRENT_USER\System\CurrentControlSet\Control\MediaProperties\PrivateProperties\Joystick\OEM\VID_046D&PID_C24F

Test this values, it works for me:

OEMName: "Logitech G29 Driving Force Racing Wheel USB" instead of "G29 Driving Force Racing Wheel"

OEMData: 43 00 08 10 19 00 00 00 instead of 00 00 00 10 00 00 00 00"
If your OEMName or OEMData are different from that, change to what is noted there and restart your computer (let the G29 calibrate when restart, it is "normal", I mean always, that the G29 calibrate some 3 or 4 times before opening Steam and another time after Steam starts).

I only had those regedit problems when I used LGS back with F1 2019 ... Since moving to clean install of Ghub, I have had no issues with steering driving AMS2, PC2, AC, ACC, or even DR 2.0.
The Win10 went all messy (wasn't Ghub) with USB devices and my VR headset, but I rarely restart the computer and restarting seemed to help.
