and I run both windowed no border to make adjustments and configure other apps and full screen most of the time when racing.
I honestly do appreciate the educated respectful responses. Unlike some of the threads i see on here.

You might see if you have an application or if you have a browser open with notifications enable which coincide with when AMS2 minimizes.
I still get this problem and have done for a long time, it can be very annoying and I know others who race a bit more regularly online still suffer this issue.
One suggestion was finding the game.exe file and changing properties under the compatibility tab, checking the box for "disable full-screen optimisations".
I tried this and it seemed to work for some time, but I had a minimise to desktop yet again just recently. And all it does is minimise, it doesn't crash, clicking the icon on the taskbar brings it back, by which time your car is wrecked in a barrier (and yes I do have the game set to full screen). Still worth a try
What the above option does is switch the OS to a legacy behaviour with regards to exclusive full-screen and windowed mode. Windows 10 adopts a slightly "better" way of managing full-screen and windowed mode in theory, which means full-screen isn't really full-screen but borderless, with your PC thinking otherwise. This is meant to improve efficiency when alt-tabbing while still handing over most of the resources to the game. As AMS2 is running on an old engine, there may well be quirks with some newer features of the OS.
I have windows notifications off, but even so, they never bothered other games and nor do other games minimise, just this one. I am also using the app Razer cortex, which has a game booster function which can turn off many background processes when a game launches if you feel that might be an issue.
Either way I am not sure what the issue is here, but this may help others. The game seems more stable these days with the problem behaviour quite rare.
Then moving over car setups replays and game settings from the desktop copy restored the in game settings etc..
It stopped the CTD's for me and it's a bit easier than faffing with the EXE or game files.
Also setting the exe to "run as admin" along with the desktop icon might help.
Seemed to sort out the game refusing to launch issues I'd had before.
Not sure but think this raises the games priority level or summat like that???
I would open event viewer and expand the Windows Logs/Applications and see what is app is stealing focus/handle that window but it does sound strange mate.
Also disable Game Mode in Win10-11
