I knew I was in trouble when playing along with Squirrel tutorial series, when the map I generated per instructions was completely different from his, and the input dialogues were substantially different. Any pointers in the direction I'm looking for would be greatly appreciated.
Try GrandT or Master Hellish. I've enjoyed both. GrandT has a couple where he has saved the map to the workshop so you know you're starting at the same point.

He's not posted a video in 5 months.
Hope he's ok. There was some family emergencies going on I believe.
He did some great videos and yes would recommend to do/continue some of his saved games/game progress mods on here. He does not use so many mods [which is handy] and some can be disabled and won't affect the save.
He did a Squirrel map too. One of my favourites too. I'll find it and post it here:

Doing this one myself using UK rolling stock. A British sort of theme.
