If instead however you mean after it's already updated and a save game and you resaved it, it keeps coming back to replace vehicles for that new save, then that shouldn't happen. Ref @Metacritical's suggestion about conflicting mods in that case.
A fallback mod for the vanilla vehicles models, that allows saves to keep using the older vehicle models, without issues. The game does not automatically update the older models to the new ones that were implemented in the most recent update.
When starting a new game. On the second Create New Game panel. Click on the Settings button near the top of the screen. You should now see the mods list. Disable the legacy vehicle mod in the list.
You can also do the same thing when loading a game either in the start menu or while playing the game.
But be warned. Removing a mod may cause problems if something on the map requires that mod.
That mod is so you can use mods that have the old tooling or mods that use parts of the old tooling. There's is no I'm going back and re-tooling all my repaints! All it is now is a dependency.
But when I load that map the next time I play, it automatically put itself in 1st place...
Go to the game properties, then installed files, hit the top right button(don't know the name in English).
In the unfolding map you go to mods, there you find it, just move it out that map or delete it.
It's not a perfect solution though.
! Might cause mod-conflicts, I had it with one...!
