As far as the bonus question. Is one of those trucks from the European vehicle list while the other is from the Asian vehicle list? If so then that's why that's happening. And makes it a little more understandable. The trucks are designed to be used separately but the game still lets you use both at the same time if you want to.
But I also set up my industries with up to 1,600 production, so trucks could never handle that much production. But a train with 50 cargo wagons can :)
If it's not a short trip and the terrain isn't fairly flat, use a train. The choice isn't between using trucks or a using a train, it's can you NOT use a train and you HAVE to use trucks.
That's a very good way to put it.
