ships and planes are less important but it's up to you what you do in the game and what routes you want to create. if you don't want to use trains then no one is forcing you to do so,
Ships and airplanes do not require any infrastructure for their routes so they are inherently the most simplistic. Road vehicles can use infrastructure that already exists for cars and do not require any special signalling to work and can turn on a dime so do not require complicated interchanges like trains do. So trains naturally become the key feature simply because they require the most work and thought to make them work.
Hi, no it's not just about the trains. Trains get all the publicity, but it's the full network that makes it all run. Try it and you'll see.
Each vehicle type has its pros/cons that fit certain uses, and these evolve over time as newer vehicles come available. In late game almost any vehicle type can be winning, but at higher difficulties some are much harder than others to be profitable, especially with the 1850s vintage vehicles. Trains are actually the most difficult to work with there, with ships and road vehicles being easier options. I often have no trains for first 50 yrs...

planes would only make sense once you are talking a few hundred km². (except for islandhopping)
*But this is a game and larger maps aren't feasible for now, so they shoehorned planes in, cuz they are cool.
