I went through the tutorial once while streaming and didn't really understand the fermentation step. So I started from scratch on my own time, and it still doesn't really make sense. Am I always aiming for the 20% sugar 80% water ratio? Fermentation is where I'm really getting lost at. And, to a lesser degree, Distillation, because it seems to require 3 bottles for early recipes when the tutorial only requires one bottle?

So I went through the tutorial a second time to try to see if I missed anything, and when I went to create the Poor Man's Tequila, one of my cauldrons just... wouldn't update? Even when I destroyed the batch?

So I restarted for a third time, and I can't complete the distillation on the rotgut. None of the bottles has a high enough ethanol percentage.

Okay in case you're still stuck:

Fermentation can change the flavor profile of your booze, while you are usually aiming for a quite high ethanol, you don't want it to destroy your flavor profile. Also don't expect to hit the ethanol levels on level 1, it get's quite easy the moment you get the add ethonal button. For destillation - every bottle has a flavor profile again. Removing a low % one, will increase your ethanol levels, but also change the flavor profile - it'll also decrease the amount of liquor that you get.
So for starters, just go with lower quality products in the first level, it'll be chill the moment you can add extra ethanol in the bottling.

In the fermentation stage you can select between three yeasts
Depending on which you pick you get different flavours from your mash. You can see those in the graph on the bottom. Every coloured dot is the point where you add one those flavours. If you change how long it'll be fermented you can omit those.
Generally speaking the longer you ferment the more ethanol you'll get, but if you go for a sweet and sour alcohol, but your yeast adds bitter notes, you'll get points subtracted in your score.

The three yeasts have different ratios that they'll allow before being unable to live

I found that when you are creating a recipe and you click on the trash can it does not delete out the recipe it doesn't do anything
