With four people in the large ship, there's still downtime for the crew a lot of the time. The only time my ship's ever been really busy is when I was fishing in loot in the middle of a dogfight, or a few times when I wanted all three guns running.
When there's nothing to shoot, your gunners in a four-player crew can help maintain the ship, or help ferry goods to the recycler. Now, with six, they'll probably sit in their guns doing nothing, getting bored because there's nothing to shoot and nothing else to do.
There's three guns in the large ship, to start, but not enough power to run them all. Your engineer could keep things running but is basically going to be glued to the fusebox, doing nothing more than flipping on broken breakers. He may get bored unless you rotate jobs between missions. This still leaves a sixth person to entertain themselves somehow.
But your mileage may vary. My friends are used to playing closely cooperatively. If yours are a little more... let's say anarchic, it may work for you.
We had a Captain, two dedicated EVA guys, two gunners and an engineer. Gunners obviously have something to do at most times, the captain certainly too and the destroyer is big enough for the engineer not to get bored quickly either.
Whenever there's downtime the EVA crew assisted in crafting and/or fixing engine trim and defects. Overall it was pretty nice.
We do, however, play on Insane, so there's plenty of ammo to be crafted and hull breaches to be fixed ;)
Mind you this is with the freedom loadout on the destroyer not one of the premade ones. Generally recommend the basic one with the Benediction Cannons, supplement your weapons with Heat Sink Mods and an energy gun once you have a couple of generators up as shield damage is always capped at 2.
