give the main gun to the gunner and put some B.R.A.I.N gun around the ship.
engineer will be busy as usual but you dont really need anything more really
In our internal playsessions I pretty much enjoy Destroyer more - but it also requires you to know the layout of the ship well, and have some mobility perks if you run a time-sensitive build (eg. extra damage for flipped circuit breakers).
Some players get it pretty quickly, some players need a bit more time to memorize where things are :)
If it makes sense with the Relics, I put the Power Generators in the back, so they don't take valuable space in the front part of the ship.
And if there's more power needed, I can run there and enhance the Generators, while also charging the Thruster Boosters for the pilot.
As for the OP question, I've seen many successful 3 player end-game screens sent by our community, and we also internally play in all the player configurations.
