- Vestigial Shrines, that you can find between battles, allow you to sacrifice one of your vestiges and then give double the setpoints of that particular vestige. So if for example you sacrifice Poison Thorn, you'll get 2 points in both the Verdant and the Poisonous sets. They are single use.
- Vestige Grinders, which you can access after defeating the first Guardian and in the final Carver Shop before the Villain, allow you to sacrifice as many vestiges as you like, but only retains the setpoints, so no added bonus. You can use these to make space in your inventory for new vestiges.

I would have like 3 crit set, destroy one of the item at the grinder, then lose my crit set bonus -_- doubled or not it's wildly untested and never retain my bonuses no matter which i try
That's not a bug, each item is providing bonuses. If you break them down, the bonuses from the item are gone but it adds to your sets. Example if you have say, a +25 physical damage amp and you break that down, you'll get the 2 set bonus so it stays. if you already have one then it would only become the third or 4th set bonus which are not worth as much so you lose out overall but free up slots for other items. Does that make sense?
Edit: And if you are talking about the sets themselves, I have personally never run into this bug and I've done hundreds of runs at this point. Everything always breaks down/adds accordingly.
Also there is the one that does single sets and one that does double. If you just finished a boss or you're in the last camp before the final boss, that is a single which will not give you an extra stack it just harvests it and maintains the current stack you are at.
