Some bugs and fish can be used for villagers requests, along with clothing and furniture. You can sell some of this stuff if you want. It is usually advisable to keep a couple on hand in case a villager asks for them. They can be sometimes hard to find if you hunt for them after they ask.
Sea shells are only good for daily milestones really. You can turn some into fertilizer, but you need a ton of them to do that, so it's really not worth it.
Other things like stuff you find metal detecting, some can be sold, but it is advisable to keep the rarer things like wires, batteries. Almost all disks can be sold to Franklin for more money then selling to John, though you should keep a handful in case you need them for something you want to make later.
If you are at the start, or near it, and want to make a bit of money, you could pick cactus fruit and cook it. Cooked cactus fruit sells for a decent amount for how easy it is to get, and you can get a ton of it if you wanted.
