There's no interest on the debt and the NPCs help pay it off over time. Second, you don't actually need to pay it off until you want to build another building.
25,000 dink is a lot early on, but it's a rounding error later in the game.
It's true that not all chests have great stuff, but some items are worth 400k down there.
The hostile animals down there drop the same stuff as they do on the surface. Second, you can use the peaceful wish to make them non hostile to you until you attack them.
You can drop rubies, fossils, and trapped animals in the elevator.
Deep mining allows for massive amounts of ore. I got over 1,000 once in a single run.

My one complaint with the elevator is that the map is generated based on where you put it down, so unless you located it in the center of the map, you might end up having to travel a great deal farther to explore the underground than you would if you did, which sort of places a bit of a restriction on how you build aboveground. I'd recommend as a quality of life change for the game in the future that all mine excursions start your elevator automatically in the center.
The other complaint is that bats are kind of way too frequent in general, but as of now peaceful wish remains a stopgap, and the bat glider grind is sort of the reason why the spawn rates remain high for bats at the moment.
sometimes i enter the mine and i find 5 rubies so quickly theres no point in sticking around, then i just haul them into johns shop. some times you dont find anything really good, but in general the gain should outweigh the cost.
i'd say give your equipment an upgrade or two and try it again when you can.

Also, I agree it is a rip off. It seems the dev threw in a random number and honestly the rewards are not that great. Some Dink's are very loyal, you just offended all 3
Most of what they said is factually wrong though.
And unless you can point to another area in the game where you can get over 1,000 ore in one day for 25,000 dink, the deep mine is a really good deal if you prepare.
The addition of the peaceful wish has made the mine even more powerful. I'm trying to get to 50 treasure chests in the undergrove. I'm my personal record is 47. That's a lot of loot. I checked my old screenshots and one of those runs I got 41 berkonium. That's close to the to amount needed for a har-vac in one run! I don't see how that's a ripoff, but you seem just kind of angry for irrational reasons.

I usually go first thing in the morning to maximise time (requires buying a mining pass the previous day), I take a shed load of traps (at least 20), about 10 animal collection points, 2 mining helmets, 2 iron spears, 2 iron picks, 4 roasts and as many keys as you have (you will want axes if you're in the lower mine.)
-Side note: Sunday is the best day for this because the general is closed (unless there's a festival you want to attend)
4 roasts will last you the entire day for bonus damage, health and energy.
You can place animal collection points when you want to deliver your catches - so I don't waste delivery points, when I capture glowing crocs or bush devils I carry them around if there's only one and mark on the map where the delivery points are if I catch more while I'm near them. If I'm nearby to the mine shaft, I just throw the caged beasts in the mine shaft. You can carry more than 10 if you wish, I just get fed up of crafting loads in one go.
You can sell whole rubies for a good amount each, but I usually smash them into shards for unlocking the lower mine (and it wastes less time taking them to the mine shaft) You can also find fossils which sell pretty well too.
I placed my mine shaft near John's store so I don't have far to take rubies/emeralds/fossils and placed a permanent animal collection point outside for unloading any beasts caught from the shaft.
