Placing grass will change the soil type, but if you want to change to dirt, desert sand, beach sand, or mud, shovel is the only way to do that.

There are tools to make it easier/faster; for example, you can put lots of dirt/soil/sand into a wheelbarrow; this allows you to move/remove larger quantities of dirt/soil/sand from anywhere to anywhere else.

There are power tools (eg, dirt printer and dirt compactor) to do these things even more quickly and easily, but that's later in the game than you appear to be.
