James has been asked this question a few times and one time I recall him answering (and I'm paraphrasing here, I may not recall his exact words) it's something he has considered but having pause bound to a button, could cause some issues if used in certain situations that he wants to avoid at this time.
So, maybe in the future, maybe not -- for now, it's not planned to add a hotkey for pause as far as I know.
Pause in Co-op, however, will probably never be a consideration.
That's the best I can offer at the moment.

When I'm working and get a call. Our calls auto pick up. Clicking one button instead of open menu, go to last page, click pause would be much faster when I've got one beep and a client in my ear.
Every other game I play I can just hit ESC, or 0, or shift and it pauses the game, instead of three clicks in different places with the mouse.
Exactamundo...Needs a quick pause key.
Or - and hear me out because this is probably going to blow your mind - there are other people that aren't you! That have different lives than you! That do things differently than you!. Shocking, I know, but life isn't a one size fits all.
Being able to quickly tap one button as you are turning in your chair to get to your kid getting into something or your cat who is starting to barf on the bed is a whole lot easier then clicking through multiple screens.
Asking for something to be a little quicker or more convenient isn't a bad thing.
While in-game, pressing escape takes you to the milestones menu. From there you have to click on the options tab. At that point, you can click on the pause button.
Now I dunno about anyone else, but that hardly takes "less than a second".
I'm thankful for the pause button and am fine with it, but I think there are people that would be much happier with a traditional one-button hotkey to instantly pause. Hardly an unreasonable request.
I mean, for single player, hitting ESC on the keyboard, automatically pause the majority of games out there, really.
We're all different and live different lives, and have different preferences, after all. Not saying the current method is bad, i'm just saying it could be more standardized.
I've just given up and I place a sheet over my comforter, so when he yarks I can just wash the sheet instead of the full comforter.
I'm thrilled a pause button was added at all, but yeah, being able to get to it faster would be a blessing.
additionally, I think the game in single player should just auto pause in any menu/map/dialogue anyway. in all the other games I play, the game auto pauses when I have a UI open or during dialogue. this is the only game where I nearly died because I was in my inventory trying to grab food while out in the wild.
not auto-pausing while in menus/dialogue also wastes so much in game time. it always feels like there's not enough time bc the clock keeps going even in menus/dialogue which is such a shame.
