Is there any way to acquire Stingers after starting Hardmode?
All hornets are replaced by a variant called a Moss Hornet that doesn't drop the item, so I'm confused as to how I go about crafting the things that require them now.

well there are other things that can no longer be done after WOF dies. many mobs and biomes cease to exist. certain things have to be collected before WOF. kinda sucks imo. wish the dev would find a way to address this problem.

The solution is simply going into a normal mode world and running into the jungle.

Or making those items beforehand. If regular hornets were in the jungle now it'd be too easy. Granted, I wish they did drop stingers but Id feel a bit cheated getting normal mode drops from hard mode enemies.

Moss Hornets don't have ANY drops, though.

I'm pretty sure the normal hornets are still there, normal mode monsters seem to still be around mixed into them. At least this is the case for normal zombies.

Nope. Normal mode hornets are completely replaced, as are spiked slimes which also had a chance to drop them.

Stingers are unobtainable when Hardmode becomes activated. Seems like an issue. There are a few other similar instances of things being switched to where they're nearly unobtainable.

It's pretty simple.

Create a new world and avoid killing WOF.

Moss Hornets don't have ANY drops, though.

They don't disappear entirely for a LOOOOOOOOOOOOOOOONG time. I've never played any world long enough for that to happen.
