Full Necro Armor, (Superior) Phoenix Blaster, Meteor Shot and Beenades is what I used recently. Spamming Beenades does a ridiculous amount of damage. Even without those, the Phoenix Blaster on its own does pretty well. I don't remember the exact amount time it took but it's about a minute or so...maybe more...either way it didn't take long at all.
I'm talking about damage alone, not DPS.

True. But what else is there to talk about in the explosives department?

Plantera is probably not good, especially when most of the consumable explosives deal little to no damage, and you need to have insanely precise timing in order for the dynamite/bomb to have a head on explosion. WIth Rocket IIIs, however, it can prove useful if you aren't too clumsy in self damage. Landmines might work, but generally not worth the 5 gold.
Golem is obliterated by Explosives. Mass Spam of Dynamite will deal insane loads of damage to the Body and Fists. Landmines can be absurdly deadly when placed all over the floor; That is, if you can get a flat floor via Dungeon Bricks or Picksaw. And that you'd have to grapple onto the ceiling. Rockets deal quite little damage after some testing.
Pumpkin Moon in general could be done with Stynger and Rocket IIIs, as massive Splash Radius and Extreme damage can help players get past the first few waves with minimal effort. Against Pumpkins and Mourning Wood, your luck will run out.
For the record, I haven't found rockets useful against enemies at all, and land mines are ludicrously expensive to use on mobs, only do burst damage (one hit at a time, like sniper rifle), and are far too obvious for pvp use.
