End game melee accessories
So I'm trying to get a good melee build going here but I have too many accessories to use that I can't use.

Right now I'm mostly using the Influx waver and vampire knives, the beetle set with damage armor and once i kill the cultist I'll probably go with the solar eruption. So that's pretty much my setup. Also, no ufo drop yet.

One of my slots is reserved for spooky wings at the moment, then I have the flesh knuckles, celestial shell, eye of the golem, obsidian shield (still trying to get the last few to make the ankh) and star veil. But I also have sharktooth necklace, charm of myth, ninja gear, worm scarf, mechanical glove, fire gauntlet, celestial charm (I heard they stack) and warrior emblem.

So what accessories would you suggest? Should I go all in damage or try to balance it with more survival oriented items?

I would go with celestial shell, charm of myth, fire gauntlet, worm scarf, ninja gear, and wings.

Solar Wings (your spooky ones in vanity)
Ankh Shield
Celestial Shell
Celestial Stone <-> Yoyo Bag (depending on weapon, right click item in vanity for quick switch)
Mechanical Glove
Fire Gauntlet <-> Paladins Shield (Singleplayer/Multiplayer)

All warding

Celestial Shell and Celestial Stone are by far the best melee accessories. They do stack.

Mechanical Glove is a great one too. Fire Gauntlet is a weaker version of Mechanical Glove and stacks with it too.

You can do without Wings with a good enough mount; that frees an accessory slot.

If you want to avoid knockback, a Shield is a good idea. Unfortunately all shields have nearly useless secondary effects. Ankh Shield protects from many status ailments so it's about as good as you'll get.

Star Veil for fights in which you think you'll be taking near-constant damage only, else it's pretty much useless.

There is an argument to be made for reforing to Warding in Expert mode given that Warriors gain the most benefit from Warding and Defense is 50% stronger in Expert mode. But for Normal mode, Menacing is generally way better.
