Otherwise the UFO is definately better for travel, and for most combat if you aren't fighting in water
(though I still prefer the Fishron over the UFO either way because of looks)
I'd say the opposite, actually. The Shrimpy Truffle's boost is too unreliable to be useful in combat unless you're doing it underwater, while the UFO's reliability makes it a decent choice for boss battles and events such as Frost moon. However, if you have a Rod of Discord, you can use its debuff to reduce your health below half whenever you want while flying on a Shrimpy Truffle to activate its speed buff, which makes it great for covering long distances in a short amount of time.
However, I'd say that wings are superior to both, at least in combat. The extra speed you get from high-tier wings is much more useful than infinite flight. I only ever really find myself using my mounts when I'm building or traveling long distances over land (or mining in the case of the drill mount).
I could see myself building a boss arena in a Small world filled with water.
Yeah, I'd basically leave a semi-heavy object on my mouse button and go AFK for a few hours.
You would have to do that on a world other than your main one, since NPCs drown in water now.
Also, while I haven't tested it, I'm not sure how having water everywhere would affect the spawning of enemies and bosses. Something tells me that some of them might require air tiles to spawn on. And then there's Duke Fishron, who can't be fished up if everything's underwater, so you'd have to at least leave a small sliver of air in the map where you can go to fish him (or build an underwater air dome, I believe that works too).
