Well,

Let's say you don't know Terraria anymore, start all over again, everything has changed. None of the ores look the way they looked anymore.

Have you tried searching underground? Ores are more common the deeper you go.

Also, there might not be any iron deposits in your world, since there is a 50% chance that your world will have lead ore deposits instead. If that is the case, than the only way to get iron ore is to use silt/slush/dessert fossil on an Extractionator or by opening crates that are found by fishing. Lead can otherwise be used to substitute iron in crafting materials, the only difference being that lead equipement is slightly more powerful than iron one.

You probably have lead instead of iron.

Let me explain.

Upon world creation the game randomizes a couple of things:
If you get copper or tin
Iron or lead
Silver or tungsten
Gold or platinum
Demonitie (corruption) or crimsonite (crimson)
Cobalt or palladium
Mythril or orichalcum
Adamantite or titanium

They are equally strong, the set bonuses vary a little but they are interchangeable. All crafting recipes like chests and chains can use lead isntead of iron and so on.

Now you have a 50%-50% chance of getting either one ore or another in your world, this works for iron ore and for many other ones, especially the hardmode ones.

To have more replayability and stimulate players to create more worlds.

because diversity is fun and people wanted a greater degree of randomness during the creation on world. you also get either Crimson biome or good ol' Corruption during world generation.

You must've gotten the ores from 2 worlds.

Or you could have gotten alternative ores from the Extractionator, or from opening crates, or (since 1.3) from killing slimes, which can sometimes have ores inside them.
