If you have a Rod Of Dischord then you can try to teleport into one when you see honey nearby.
I have no idea if this works, but the larva just might light up if you have a spelunker/dangersense potion.
Aside from those methods and digging tunnels there's no good way to find them that I can think of.
Edit: Just read that the Dangersense potion does highlight honey blocks, which would help with finding hives.

You will (on average) find 3, 5, or 7 Hives (depending on World Size) as long as the World you're using was created at or after the 1.2 Update. Dangersense Potions will highlight Honey Blocks, as Tuxedo St3v3 mentioned (craft at a placed Bottle with 1 Bottled Water + 1 Shiverthorn + 10 Cobweb).
My recommendation: Just dig pits straight down every half-to-three-quarters of a screen and straight across every screen-and-a-half. This is made easier with a GPS Accessory.
