So expert mode.
So by not playing expert mode. What am i truly missing out on? I mean, i read the notes, but a little confused by the obscurity. I tried an expert mode play through, it's a nightmare, primarily because i'm not exactly a pro at this game by any means and i haven't even successfully completed the game on hard mode after beating wall of flesh.

I mean, are there like hundreds of items or bosses i cannot obtain or use simply because i'd play on normal instead of expert?

You do not need to start from scratch in Expert mode.
Like many does, build up your character in normal mode, then tackle the stuff in Expert mode. Which will make things.. easier (a bit depends on how you feel about mob difficulty in Expert mode).

Also there is a small chance on expert for the loot bags to contain developer armor (purely cosmetic but cool nonetheless).

I know each boss/mini boss drops an expert only item, don't know if there are any other expert only items beyond the bosses.

actually loot bags only drop from bosses and they give amazing equipable items that are too good to spoil

There isn't much exclusive to Expert mode. The only thing you'll miss will be the expert item reward from beating the boss, some are truly useful like the royal gel, from the king slime, which makes ALL the slime passive to you, others are somewhat useless (looking at you, bee queen).

On expert mode, the important point are in the patch note, but the most really "annoying" for the average player is the double health / damage for enemies. Also, some monsters like the skeleton can throw projectiles which deal tons of damage. They is a lot to tell about expert mode, but don't worry about it, worst case you can just make a quick small world and beat all the bosses there to get the expert accessory. All of them are usable in normal world, except the Wall of Flesh item (which give you a 6th accessory slot and is greyed out in normal mode). Oh and last thing too : Boss get really, really difficult as they get new attacks / get lower in life.

one nice thing about expert mode is if you are playing with friends each person gets a loot bag wich contains what the boss would normally drop. Makes it a lot easier to farm bosses if you are good enough.

In expert mode you get an additional accessory slot. It's still a lot harder but that does make your equipment options more interesting.

The WOF drop is good in expert mode extra slot :P

Just try the expert mode yourself. If you don't find it too hard, play it. If you find it outrageously difficult, go to normal. I tried the expert mode and now I consider it the default difficulty. It punishes you for mistakes, but you only have to blame yourself for them. Unique rewards are not the main plus of this mode. The joy of beating an expert mode boss is. Trust me on this one.

Expert mode is phun and rewarding, tho medusa likes to ambush you and turns you to stone at the worst time possible, usually ending in a splatt sound (yay falldmg ^^,)

And you'll need to start relying on potions to help during boss fights, some bosses its better to get an arena ready with campfire and hear lantern to help with hp regen, buy you some extra time to get that last hits in.

They contain a special item related to the boss that is exclusive to Expert mode (Eye of Cthulu's bag gives you a shield that lets you do dash attacks, for instance. And the Eater of Worlds' drops a scarf that reduces damage you take by 17%. Wall of Flesh drops an item that gives you an extra accessory slot permanently. Along with the various things the bags contain, plus their special items, there is a 5% chance of the bag ALSO giving a random set of developer's Vanity items, if the bag belongs to a hardmode boss.)
