Every Mushroom Biome I found I customized to this exact reason, making the land as flat as I could and removing blocks near lava. I feel ya mate, I lost 6 truffle worms, either from escaping, being killed by other mobs (that can happen- be careful) and killing themselves. If you see one, you might want to remove your minion too, since it can kill them as well. I would give you some (I only have two, but with my biomes I can get plent more, so no worry.) but I don't play during the week with school and all. Maybe this weekend, and maybe we can fight him together, because I guarantee they buffed him during the update. I fought him twice, the second time with buffs and an arena, and still failed. So I'm warning you, if you're gonna fight him yourself, be careful. He has low health, but a very high defense and his attacks do a lot of damage. Hope this helps.

Not true. Mobs cannot kill truffle worms. What you might hear being slaughtered are glowing snails. Which frequently do get killed by mobs due to the fact they always spawn near underground 'shroom biome mobs.

Yes. He becomes enraged outside of the ocean biome now and will only use his ramming attack repeatedly. It never really bothered me. My old method of figthing him kept him in the ocean biome. In this way, I could grind him faster without having to cover the distance I ran away from him. Cover the ocean's surface with something and use that something as a landing spot when necessary. Unless you're using a IFO mount, at which point you don't need to land.
50k health is a decent chunk. But his 50 defense is definitely noteworthy.
Oh yeah, and Terk's suggestion is a good one. It's much easier to catch the worms when there aren't the complications from world gen's mood.
The thing about His Grace is the fact that you can't just facetank his attacks. You will take nearly tripple didgit damage even while wearing the tank set of bettle armor.
Dodging is no longer optional at this point in the game.
But the good news is that his attacks are easy to avoid/counter, if you know what you're doing.
Long story short, his primary ramming attack moves faster than nearly anything in the game. It is not possible with pre-fishron equipment to outrun him. (The expert mode mechanical cart is a different issue, but that'll also take you out of the ocean biome very quickly, where his ramming won't end and will also eventually pick up speed and power.)
The trick is to use the fact he cannot change direction while ramming. This concept is lost on just about anyone that claims he is too hard. You need to dodge his ramming attacks perpendicularly and/or have enough distance from his last ramming attempt. The hoverboard's hover feature can help with this greatly due to the horizontal boost.
An excellent question. Let me guide you to the answer:
Imagine that you're figthing him and that he's to your left, and that you're on the ground. To dodge him, you ascend upwards. This puts him relatively below you. What will he do next and how can you avoid getting smashed?
Also cosnider this: some of his attacks cause him to hold mostly still a for a few seconds. If you get distance from him during this time, you can ignore one or two of his charges toward you. Would it be better to have verticle or horizontal distance during this? That can actually go either way, depending on his position relative to you.
But one more thing to note: falling can be your friend when your flight time is depleted.
