You can use some items to give you a dodge chance, like Tabi Ninja, and Titanium Armor.
You can also use any type of mount that allows you to fly fast, like UFO, and Pirate Ship.
You can also also use any kind of weapon that follows the target, like Chlorophyte Bullets, and Flamelash, so you don't need to worry to aim, and just focus on running and avoiding attacks.

"Buff tooltip You will dodge the next attack"
If doing this pre-moonlord (all of this was thoroughly tested on master mode):
* Make a skybridge out of asphalt blocks, spanning the length of the entire world.
* (optional but helpful) place sunflowers along the entirety of it (underneath the bridge put 2 blocks of grass with a sunflower on them with 170 empty blocks between each of them horizontally).
* Terraspark boots + major food + swiftness potion - and there is not a single attack during first phase that can hit you on your skybridge as long as you keep running at 80+ mph
* During second phase, she has two attacks that can hit you even while running at full speed:
1) six waves of swords from all directions, of which at full speed you will have to dodge one. There is no magic trick here, but the most important thing is to keep running as fast as possible and have the ***swiftness potion*** on for this, as to dodge this attack you will need to do one tiny little jump, and the "window" between the swords into which you must jump increases the further they are from their starting point, and to maximize that distance you have to move as far away as possible from it.
2) multiple waves of swords in a single line from one direction. This is trivial to dodge. Just keep running while they are being launched, and when you see the first one appear from the edge of the screen, do a tiny jump and immediately use the shroomite skateboard directional hovering to fly above them horizontally in the same direction. Afterwards use a ninja gear dash to quickly speedup.
* Reforge everything into menacing as defense is of no use during this fight; also replace any defensive accessories with damage ones.
* Use hallowed armor to survive one attack
* Use ninja gear to have a chance to survive more attacks and to quickly speedup
* Rod of Discord helps if you mess up, particularly to teleport out from underneath of a sun dance
* EoL attack pattern is completely fixed, in other words she performs always the same sequence of attacks during every fight, and you can memorize it easily
* stack betsy's wrath + ichor on her for significant DPS boost
* calming and invisibility potions decrease the chance of random harpies spawning around you and ruining your hallowed defense buff
