First, probably the best arena for Enraged EoL is a single long platform or floor spanning almost the entirety of your map made out of asphalt. The idea is to run on it while your minion damages the boss.
Second, you will want accessories that will increase your chances of negating hits. Master Ninja Gear and the Brain Of Confusion are very important to have. Also have a full set of Hallowed armor with the Summoner headpiece so that you can take advantage of the set bonus buff. If you have something stronger then use the Hallowed set to get the buff and then swap it out with your other gear.
Third, make sure you have a good minion. The Tempest Staff from Duke Fishron does a good job. So does the Deadly Sphere Staff from the Solar Eclipse and the Raven Staff from the Pumpkin Moon. If you have a Stardust Dragon staff then definitely use that. Use potions to increase damage and speed. The Morning Star from the dungeon works well. Set all your accessories to Violent if you are going to use it.
Finally, if someone else is joining you, there is a trick you can use to get around the increased stats per player mechanic. As per usual, the EoL will increase her defense by a certain amount with every additional player but this is only determined by how many players are on the server when she spawns. Summon the boss first and then have your friends log into the server after to help you out.
You can get some help by equipping thing such as items with dodge chance, or Titanium armour to tank a hit every now and then. Or perhaps even just get Fishron Wings and the Soaring Insignia and endlessly fly.
The biggest hurdle with fighting Empress of Light in Master Mode during the Day is that there's no advantage to it. If you fight her in a Normal difficulty world, you can still get Terraprisma and the fight is far shorter. Not to mention Summoner has the hardest time due to aggro range.

events are of course not that long, at least 2 hours to even defeat it but, i think your the one who is exagerating here
