Is obtaining pets still really hard to do? The only consistent way was maybe through a holiday from when I used to play.

Eh, that all depends on the pet that you're after. Some NPCs can sell pets like the Traveling Merchant and Zoologist. A decent chunk of pets can be obtained as boss drops (A bunch more locked behind mastermode bosses). Some can be found through certain chests, others from certain monsters, some tied with fishing, and some that have their own unique ways of obtaining.
