So I can just keep creating new worlds?
In order to get more of the quest fish you need to place them into a storage (or the game will check for it in the inventory and not give you another). Piggy banks are good for this.
For a certain drop - the number of quest you've completed on a single character will reward you with certain things. Such as the Bunny Mount after 5 quests or so. In this case, I still wouldn't suggest creating multiple worlds. Instead get a sun altar and use the bed to speed up time.
Creating a new world, finding the angler, building him a house, finding the right biome, finding a good spot of water, finding the quest fish and then making the way back to the Angler should be more work than just keep on using the world you're in.
If you´re looking for something which you can get in pre-hardmode than you shouldn´t do it in a world which has entered hardmode.
And in an expert world you can get more coins, so it has some advantages to create a new world.
But to answering your question: The rewards are tied to the character not the world, that means that you have the same improved chances to get better loot in any of your worlds.
