The best advice I can give you is to keep playing the game. There is an NPC that allows you to "reforge" a weapon or accessory, which will give it a new modifier. This comes at the cost of money, but you won't need to go and mine the world out for ore.
ok it still would be tight (and make sense) if there was a way to get ore/bars back from weapons etc.

It's been quite some time since I've heard the word "tight" used like that.
But anyway, he's pretty early in the game. After you break a certain object (I'd rather not spoil too much) you cna have a chance of your first invasion event to occur, which will make it possible to find that NPC tied up somewhere underground.
The bosses you're supposed to fight before that invasion are pretty easy, so you should worry more about the tier of ore you're using for your equipment more than the modifiers on such equipment.
Good mobility accessories and weapons that can hit at a distance will also be useful for those boss fights.

How to get accessories? I've found 2 only. Also, is there a way to make NPC's follow you and help fight? I get slaughtered by myself sometimes.

2. Nope. There is however a summoner "class" later on in the game - like other classes, it has weapons and armor made specifically for that class's purpose, but unlike other classes, its weapons summon minions to fight for you instead of you attacking enemies. If you've ever seen a friend who's completed the game flying around with a blue and orange dragon or a blue floating blob (there are many other summons but those are the best ones in the game), those are summoned minions. The first chance you have at being a summoner is likely when you kill a bee boss in the Jungle (first optional boss in the game unless you're speedrunning), though there is a very rare summoning staff you get from killing slimes that summons slimes to fight for you.
It's also worth mentioning that most ores aren't infinite - after you beat a few bosses after the bee, an ore called Chlorophyte will grow semi-infinitely in the Jungle (there's an overall limit to how much can exist, but once you mine some more will spawn or grow there), and Demonite/Crimtane, Hallowed Bars, and Luminite all are dropped by bosses that can be fought an infinite amount of times.
