Melee has very short range, but an ok amount of damage, and a ton of defense.
Ranger is all around, having good defense, damage, etc.
Mage deals a good amount of damage, for exchange of having less armour, and generally being helpless at close range.
Summoner is super squishy, but has minions that can deal a ton of damage.
Stardust is interesting because it has the highest class-damage increase, 66%, making it wonderful despite the low defense. Although you could reach higher damage with the Nebula damage boosters, the incredible boost to minions like the Stardust Dragon, Cells and UFOs gives you a major primary source of damage while you get to add to that damage with your own weapons. Using nothing but summoning accessories is really beneficial to a Summoner, and since your hands are free to use whatever melee, magic and ranged weapons you want, it makes the Summoner a good all-rounder class.
I rambled on too much, but I hope this helps.
