I guess? You're not really gonna get much money from it.

I'd keep one stack in your inventory, a few in your chests, then sell the rest. Always useful to constantly stay fed.

A few very important potions require certain fish.

Endurance - Armored Cave Fish
Wrath - Ebonkoi
Life Force - Prismite
Wormhole (If you play Multiplayer) - Specular Fish

Then there's a few less important or cosmetic-only potions that also require a few specific fish.

Other than those though you can pretty much sell the fish.
