how about new npc called hunter. He can be founded in forrest on boulder of world.
He can give quests example found and kill wolf, face monster lizard etc.
and had a shop where sells food. And he like live anywere even crimson or corruption (because why not?). And depending on where he lives and will for example: blood crawler legs (hmhhmhm tasty) and bbq with unicorn (because again WHY NOT?). Your ideas?

I personally don't see the point o it however.

Could work somewhat like runescape slayer, so you'd have to kill great amounts of the quested monster and get additional rewards for it along the way, something like angler rewards, accessories that boost monster damage or reduce damage dealt by monsters etc since there is a big variety of creatures in terraria it could be fun and add more meaning to farming a certain type

Hmmmm. Imagine if he was like an Angler. He will ask you to hunt down rare enemies in different biomes and bring their heads/trophies for a reward.
And those mobs would be like minibosses.
