Alternatively, use the cosmic car key to fly around. Any of the mage weapons, the blaze or the arcanum, hone in on him, so you can focus on dodging. But mage weapons are my preference; you can use whatever class of items to suit yourself best. Weapons with range, like swords with projectiles, guns, and mage weapons are what I recommend.
A better strategy than number 2 tee hee is to attack the head every time it's open, or otherwise attack the hands. Don't completely kill any of them and instead leave them at really low health until each of them is nearly dead, and then kill all three eyes at once. This makes the first half of the fight much easier, since you don't have to worry about one or two True EoC's attacking you while you still need to destroy another eye.
I've heard read on the wiki that if you go really fast, e.g. via asphalt or Mechanical Cart (I'm assuming you're in expert mode), then the Moon Lord's tongue thing won't be able to latch onto you, meaning that A) You will be able to use life-steal effects such as Vampire Knives or Spectre Hood, and B) the Moon Leech Clots won't be spawn. (The Moon Leech Clots that spawn when the tongue grabs you go towards the Moon Lord's mouth, and if they make it to his mouth without being killed (they have 400 HP), then it heals 1000 HP to one of the Moon Lord's remaining live parts.)
Also, the Comic Car Key mount can travel slightly faster than the Moon Lord does. (Idk if it can outrun the tongue, though.)
If you'll be maneuvering around an arena, then single squares of honey placed around the arena inside bubble blocks will give you a healing buff for 30 secs, and it renews each time you go in honey. And obviously heart lanterns and campfires and buff potions are useful (duh).
If you're not using any blocks for cover from his attacks that can't go through blocks (cough cough PHANTASMAL DEATHRAY) then the Rod of Discord is great for avoiding them by just teleporting behind them.
Also from experience, if you have a Stardust Dragon out, then it makes it nearly impossible to hit something with a weapon if the dragon is already on top of it. So maaaaaabe you could have the minion out while whittling down the hand/head eyes, but you'll want to get rid of it if you're using a powerful weapon against the core.
Step 2: lube your anus.
Step 3: let him bust a nut in your butt.
Step 4: tell your parents that you are in a relationship with the moonlord.
Step 6: fight for "moonlord and human" rights.
Step 7: marry moon lord.
Step 8: be moon lords trophy wife.
Step 9: have kids.
Step 10: realise youve been married to an interdimensional being for 20 years and your kids are ♥♥♥♥♥♥♥♥♥, then go an a massacre and kill your family and the blame video game before killing yourself.
Step 11: have femenists and SJW's complain about video games.
Step 12: after your dead for about 20 years, there will be a few documentaries about you and a move that will win an oscar.
Step 13: thats how you beat the moonlord.
I don't reccomend this, you either want to take out the head first (for big laser if you can't dodge it for some reason) or kill them around the same time. Make sure you are well buffed, because he will do a lot of damage when all 3 true eyes are ouf and bashing on you.
Also for them, move zig zag and not a circle (circle is probably the best for most of the game which is why I specify) since the true eyes aim in straight lines.
