Vampire Knives are great for any high defense build. The health you get back for using them makes you even tankier. The scourge on the other hand makes it easier to do more consistent damage from a distance. Great option for a backup melee weapon for a build without a very high defense stat.

imo vampire is best for low defense classes/builds like summoner and ranger. It benefits melee and mage too but better on the more ranged builds and summoner since they got no regen buffs like mage or melee defense. Especially summoner since anything that gets close once you die your minions go away too leaving a gap if you're playing multiplayer.

Vampire Knives. SoTC is better for clearing events and grounded mobs but I always found it has slightly less DPS against bosses (especially since you spend so much time airborne) while also having no healing functionality.

There are multiple sources to deal damage from distance against a group of enemies, there's just slim time slot where you would actually use the SotC. On the other hand, there aren't so many items you can use to constantly heal yourself at a high rate, and if you aren't a mage, the Knives are you best option. => Vampire Knives, which remain versatile throughout the rest of the game.

Scourge of The Corruptor will make Classic and Expert Mode Plantera a lot easier as long as you have a good-sized arena for it. Just spam that thing and the ricochet effect will deal most of your damage for you.

Justabeere is a big fan of the Spectre Set over the Vampire Knives so I would expect some sparks to fly in here if the knives are promoted too much. I myself would never use them to enhance a class build but they are good enough for their non-modifiable function. Pretty much any class can benefit from them as an auxilliary weapon for that purpose itself.
