The ocean, for instance, only exists in the ~250 blocks near each map edge. After that, you can add more water and sand all you like but the game'll still think it's desert. There's no simple way around this, unfortunately. Nearly all other biomes only care what blocks are nearby, though, so you can make jungles at spawn and ice in the oceans.
Also, tEdit doesn't show the background that'd correspond to that biome, so check in-game if you want to know for sure.
But I haven't attempted this since the original post, so maybe some of the new additions from recent updates could be used to find workarounds. Good luck and let me know if you find anything! I still want to create my dream world lol.
