Is a 1-thickness brick wall enough to stop corruption?
Is it enough or do I need 3 layers? Or 1-thickness wall and air behind it? Corruption/Crimson can't go through a brick wall right so it should stop it?

6 blocks or 1+1+4 hollow

Normally a 5 block gap between a purified and corrupted biome will not spread.

3 block gap is plenty, although thorn bushes that spawn from corruption can also spread it so put an uncorruptable block (wood, slime, etc) against the corrupted side at the least.
so:
- 1 brick wall (to stop thorns)
- at least 2 air-'blocks' behind the wall to stop it going through the wall (2 air + 1 wall = 3 thickness)

Im making the gaps with dynamite so it should be more than thick enough and stone bricks.

a solid 5 block wall, yes, anything less and it will spread slowly, though an insulated 6wall also allows quick travel, as it can be lined with rails

(1 wall each side)+(4 block air gap) OR (5block solid wall) OR (12 block dynamite air wall, vertical only*)

The five block stuff came about from people doing a 3 block gap, and then lining the sides with other blocks. It really does look nice, but it gets spread word-of-mouth as required.
Okay got it.

Torches are okay to place inside the wall right?

And how deep/high must the walls be? Or do I need a floor and ceiling as well?

Floor and ceiling count, in a sense. If you want to wall a section of world off, like your base or the jungle, you have to completely disconnect it from the rest. So for your base, about 50 blocks out dig down to at least 50 blocks below your base, dig all the way under to about 50 blocks past the other side, and dig back up. Make the hole 3 blocks wide, with an uncorruptable block boardering the outside.

For the jungle, dig all the way down to the underworld and block it off.
