The Ranged can be divided into subclasses of arrows, guns, and explosives.
Melee can be divided into Swords, Yo-Yos, and Other Melees.
Throwing also exists, but it's kinda useless as there is no real Hardmode stuff for it.
Really, it just depend on how deep you want to go.
If you're talking about basic classes, there are 5 prehardmode and 4 hardmode classes.
If you're talking about weapon subtypes, then it depends on what you classify as a subtype.
By my definition of subtypes, here are the ones I can think of:
Mages are weird. Most of the weapons are different, meaning it's hard to categorize them into subtypes.
Melee has a few different weapon types, most notable being yoyos and swords.
Ranged has two subtypes, which are bows and guns.
Summoner has two subtypes in its already small class, being minions and sentries.
EDIT: Forgot the hardmode ranged weapon subtype, rockets.
Just like yoyos are not a class.
