@cockroaches : when you are at the trial stage, just wait until the end, it takes times because the mafia has the bucks to defend iself and can be very persuasive, but i assure you it will end someday.
Btw : having a Mafia on a trial is nice because during this time it won't make you lose points
a) The trial goes forward a lot faster (a more logical explanation, since the mafia is too busy to defend itself)
b) the trial stops completely, because the action of guerilla was needed to move it forward (a game mechanic explanation).
c) the change of mafia plans does not impact the trial at all.

Actually it depends. When you arrest the mafia, they are going to "judicial guerilla" process and advance it normally (one percent per one activity point). Don't interrupt it or change it - they have to finish it, the faster, the better. You can do the math and see how long will it take to reach 100% at given rate. When the process is finished, a court battle will end, and size will be reduced. Smaller mafias will go away, larger ones you'll have to drag into court again to reduce further.
At least that is how I remember it, I'm no expert on that one ;)

Actually that would make more sense. Right now the only reliable way to put the mafia down faster is by using the "help" action, and actually feeding it money (which advances the counter). It would make sense that in case of Judicial guerilla, raids, or black bag jobs would increase the counter instead of decreasing - but that's the game engine for you! :)
Or better yet - since entering Judicial Guerilla resets the evidence counter - it would make sense to assume that when judicial goes to 100% - mafia wins, and gets stronger (+size) and if the case file goes to 100% again before JG does, the usual "mafia loses trial" event would fire.
That way stronger mafias could actually grow faster if thrown in court, or at least not to lose faster than the smaller ones.
You could do it like Donnie Brasco, provide diamonds to prove that he's a successful thief, helping him to soar through the ranks, though.
You actually CAN help the mafia. In the late game there's an event folder about black panthers (or so I remember) which enlists the mafia to fight with those, and makes the option to help them available. Ironically, it makes mafia trials much speedier.
