Large mods such as Empire Total Factions usually come with installers. There are sometimes problems with installing old mods on new computers and not all Empire mods work on Macs, unfortunately. If you'd like a simple mod to unlock minor factions, and if Empire Total Factions doesn't work on a Mac, then you could try All Factions Unlocked. (All Factions Unlocked makes the factions which are already on the map playable, such as Denmark, Venice, Persia and Mysore. It doesn't unlock emergent factions which can appear during a campaign if there's a rebellion in their home region, such as the United States, Hessen, Ireland or Afghanistan - you'd need a different mod for that.)

There's Napoleon Total Factions: http://www.twcenter.net/forums/showthread.php?357320-NAPOLEON-TOTAL-FACTIONS-(last-update-28-04-2012). I don't know whether this works on a Mac. I also don't know of an equivalent of the All Factions Unlocked mod for Napoleon Total War, unfortunately.
In my experience, achievements don't work when I have mods installed.
DarthMod is an option which a lot of players enjoy and recommend, however different people prefer different things. DarthMod offers unlocked factions, extra units, changes to game-play (such as the behaviour of the AI on the campaign map and battle-field), improved sound effects and other changes. (It also gives players more money at the start. I prefer having the normal amount of money - I like the challenge of having to choose between constructing buildings and units, rather than constructing and recruiting everything possible.)
DarthMod is one of a lot of major mods for Empire. You can find a list of major mods here: http://www.twcenter.net/forums/forumdisplay.php?1071-Empire-Total-War-Hosted-Modifications. You may want to consider other options such as Empire Realism, Imperial Destroyer and Imperial Splendour.
What specifically do you want to change about the game? If you'd mainly like to change a limited number of specific things, you might want to try smaller mods. For what it's worth, a suggested set of minor mods is here: http://www.twcenter.net/forums/showthread.php?246170-Empire-Mod-Questions-amp-Recommendations&p=15536086&viewfull=1#post15536086 (Now, I'd recommend Simple Navy instead of Equal Navy). You might prefer different smaller mods - such as the impressive Additional Units Mod instead of the Minor & Emergent Factions Unit Pack, for example.
