I can think of a few tips to help, though.
1: Get into close quarters and get into a pattern. Aside from the very first combo you get on him, he's going to block halfway through your combo and then headbutt you to break it. Learn the timing for that headbutt, and always go for a block when he blocks. It also makes him less likely to do his elbow drop attack, which *can* be blocked, but not reliably.
2: Rocks aren't just for Abobo. While you can't steal the one he stands near, you can use the punch move to grab the other rock on the ground, and then throw it in his face instead. What's really comical is that he leads his throws (judging where you're going to be, not aiming at where you are), but it's based on your proper speed, and not the slowed down "carrying a boulder" speed, so it's very unlikely to hit you.
3: If he gets knocked down, get away to the sides of the arena and try to double jump. This doesn't apply early in the fight, but eventually, he's going to react to every knockdown with an impossible to block/avoid counter bodyslam, and I hate it. I think the only way to convince him not to is to be on your way into the air, and even then, it's a bit random.
4: Sonic Vaccuum is a last minute killer. He inhales with incredible force (you have to sprint to stay out of it), and if he catches you, unavoidable damage. It also has zero windup, so he can use it and instantly punish you for being in close range, which is pretty much a contradiction to what the fight has been promoting you do all this time. If there's something I'd use a healing item for, it would be undoing the damage in the final phase simply because this attack is too hard to predict or avoid.
5: The shock waves aren't particularly fun either. Get to the walls, double jump to avoid them, then follow behind to start punching him in close quarters again.
6: If you must Super move, use it when he has a rock. He can (and will) block super attacks, and is also able to headbutt counter them. Not guaranteed, but it happened enough times I want to avoid wasting it.
6b: Also remember that if they knock him down, he's probably going to do a body slam counter.
7: The Mario Stomp tactic does not work. He can block it, or, if he's feeling particularly nasty, he can hit you with a backhand attack that has priority over your aerial Strong attack.
Honestly feels like the hardest boss fight. The boss after wasn't nearly as bad as this.
As for Adobo, what I did in the first run (Normal difficulty) was just some lights into Volleyball Set into Dab. He didn't give me much trouble in terms of blocking in that run. Volleyball Set into Dab also does a heckton of damage.
