Arguably, most popular is Swim, channel Swimstrim, also with a lot of Strategy Talk.
For me, the largest focus on actual "education" has Mattjestic_Gaming.
Very entertaining, yet very strong, and also quite known for his PUBG content: P4wnyhof.
Other, in my eyes noticeable, channels from strong players. Sl1ckz and BruisedbyGod.

I listed several beginner guides and videos in this forum.
As for "some basic builds", I don't know what they are yet or I fail to execute them well. (I see Hotze's link has written guides too though, so will go through those too.)
Why is that? Because good players always try to play whatever they can make sense of. Don't try to force a build upfront, cause chances are pretty high, that the rng will be a nightmare. You'll have to select, of course, but you don't start a game with a shopping list, if you know what I mean.
The build you play is not so important, especially on lower ranks. Economy, micromanagement and build optimization are important. Yes knights are a strong alliance, but do you know how to play them? When to roll for units? What items you need? Who gets those items? Who's going to get 3stared? How to position your units? Who you sell, if your board overflows? How to branch out if you have too many contestants? That's what makes you win games on the long run.
You need practice. Lots and lots of games, to get a feeling for the small things in Underlords, but I won't lie, I am hungry for good builds as well, just out of curiosity, not to actually play them. I like to see how others approach the game. I think it helps me to balance my opinion about certain heros, alliances or items. That's why we have a "Hall of Fame" in our group. Some players post their winning builds there. You can take a closer look and even ask some serious questions if you want to. There's not much content yet, cause we're still small, but it's a good start.
