I typically do two orchards. One with Apples and Peach and the other with Pears and Peaches. I try to make them as close to an equal split as I can of each fruit and once the trees get to maturity they produce a good amount of fruit, I have had upwards of 1400 fruit each year per orchard. To really get the benefits of the orchards you do need to have a Preservist Building, which also required a Glassmaker.

All 3 trees have different lifespawn, maturity and harvest season (apples and peach share the same late autumn) so it is good to mix in the trees to have longer harvest period and less downtime (pear has short lifespawn so had to be replanted more frequently)

I plant 50% pears and a 25% split between peaches and apples and that works out great for harvesting. Repeat for each new orchard.

I use that recipe as well. Works out pretty good.
