You can buy iron ore/ingots from traders. Linen shirts are probably the best trade item since they can be produced on any map. Cheese is another good item but it is available a bit later.
There is no use for gold ore, AFAIK, considering that you can get more gold bars from TP than from the forge.
Whatever I can not find on my map, i buy from the traders.
They are really common in alpine and arid map types.
There is use for gold ore.
Assuming that you have the relevant mines mines, gold and iron ore, on your map as well coal (required for the foundry etc), and you have Tier 3 buildings you can turn the ore into bars (ingots) by building a foundry.
You'll need the coal for the foundry to make the gold and iron ingots and then you can trade them, you can also trade them as gold and iron ore, but you'll get less money in return for the ore.
I should've made it clearer. I am aware that golden ore can be processed and turned into golden bars/ingots. However, trade produces more gold per year than gold ore processing.
There is no other use for gold ore, therefore, not having its deposits on the map is not critical. There is also no need to buy it from traders.
