Normal mines are faster, but run out eventually.
Wagons work. You just need a bigger output. You can't sustain a city on one mine.
I’m about to rage quit this game for another six months again. Cannot wait for modders to fix the issues after full release.
I also have deep mines far away from my city. I do not get the prob you describe. Getting things going on is a little bit tricky. Make sure there is a massive influx. I have a sand mine pretty far away. I made a temp home, build some fruit trees near it and a well. So it became a tiny town. Filled all mines up with max workers and made sure all stock in the "main" villagers were full. Then you get the flow going on. Laborers pick the sand from teh stockyards. and the wagons pick the sand up from the deep mines.
try to figure out the game and its mechanics. Not: I play this way, and then it should work. It is like asking a puzzle to make itself.
This means your output of minerals is lagging behind your usage of those resources in production. In other words, you need more mines.
