Peach trees are in a different season and mature quickly. They'll reach 100% yield in a small number of years.
Apple and pear trees are in the same season, however they mature very slowly. They will only be at half yields for a long while. But 50% yield + 50% yield will fill up your arborist work time to 100%.
You could just technically do all apple or all pear in the second season, since they don't really vary in any meaningful way, but your villagers will appreciate the variety.
Once the apple/pear trees reach full maturity, they won't be wasted because other villagers often will pick their own fruit and help arborists out, still allowing you to harvest most/all of the trees before the end of the season.
