How finite are the resources?
I bought the game but I'm still below the 2 hour mark for refund

I'll be honest at my age there are limits to how much I want to really be challenged when playing games. Probably the hardest game I've played recently was Ixion, and I was only able to beat it because I did a turtle strategy tanked the stability hits with stability-boosting buildings and stayed in the 2nd solar system until day 500+ and completely converted my economy to waste recycling.

In short I enjoy working towards the closed-loop resource printing system
I've played games like Settlement Survival which is another Banished-inspired game, but even in that eventually, you can plop down mines that print stone, and setup foresters to plant more trees.

I've heard there is trade in the mid game but I also hear mixed feelings on how reliable it is, I mostly bought the game based on enjoying what I believed to be a like of similar survival builder games and the fact that Crate made Grim Dawn one of my favorite games, carriers a lot of reputational weight.

Am I ever going to reach my closed loop and be able to build my utopian medieval city, or is this game maybe just not the formula for me?

On a large map it's unlikely you'll ever run out of natural resources, before getting bored and start a new one, although large distances will kick in and make the gathering more timeconsuming. You can fill gaps with trades easily and pretty much switch to a trade economy aswell, if you so desire. This game isn't that hard really.
Maps will not have all resources on them though Idyllic will be best for getting them. Trading will still be needed eventually though.

Crate do have plans to introduce quarries and deep mines to help with making resources more infinite, but when those will be added to the game only they know. And you also need to play on Pacifist mode to not have to deal with raiders/predators attacking.

As of now, resources are finite, some of them more than others, depends in the type of map you are playing on.
Thus far, I think it's fine, traders are an ok source for getting the resources you need.

This. Ime you should be able to find your footing before you run out even half or less of your resources.
Except sand, which is an issue because you need it to make glass to make preserved foods which is one of your late game foods. Which means it's a constant drain on your sand supply unlike the others where you can generally buy enough off traders and actually build major stockpiles before running out of what the map gives. You can just make smoked meats and fish of course, but those feel less reliable than preserved fruits and vegetables.
