Changing jobs?
I'm new to FF and don't know how to assign my workers as labourers rather than the skilled jobs they have?

Hit (P) to bring up the professions window. From there, you can see if you are missing any workers on any jobs (they will show up as red). If you want to reduce the number assigned to a job, click the "-" button next to that job. They will automatically default back to laborer

Hi, thanks for that!, I know it seems common sense but am struggling with an ever growing population that all seem to be skilled but very few labourers now!?

labor pool are your workers, Out of this pool builders get's pulled to the max amount you have set for builders, and if you build enough to fill all the builder slots (when nothing to do they become labors again). If you build a building that need workers; sawmill for example, by default 2 people are subtracted from the labor pool, and put into the skilled worker section, if you need more you can add up to 6.

Keep food at a +5 months and enough houses to get more people to your town, to increase the labor pool.

You don't actually "assign" labourers. Any not employed in a building and new immigrants are automatically designated as a labourer (farmers not farming and builders not building will also return to the labour pool until their job needs them again). If you need more, build more houses, new immigrants (labourers) will come, or unassign some from building work place slots (as rodburns said).
