Yes, it can be done in just one, as the post above you said.
The Italian Job has all three guitars needed and you can get the achievement in that mission.
I did too.
Do we know for a fact that only three guitars need played? And/or that the achievement is mission-specific and not playthrough-specific? I assumed it was cumulative since another achievement, Down by the River, counts up across the various missions. If the total number of played guitars across missions can be reached with the three in the Italian Job as the last ones, it would make sense that we're all hitting the achievement at the same point in that mission without it necessarily meaning that that's the only way to net the achievement.
Curious now if anyone's gotten the achievement during that job without having been playing the guitars all along in the earlier missions.
I know for a fact since I played the Three guitars on this mission and got the achievement, and I looked it up in other guides which also say it needs 3 guitars. Not just any three, there are three different kinds of guitars.
All 3 kinds are on this mission and thats all you need.
I dont think its "mission specific", you CAN probably play all 3 in multiple maps and get it too, but why bother when you can get it in Italian job and be done with it?
George Harrison fan.
