The real trick is extending your stores by as much as possible. Stick all seeds and food in an underground sort of pantry where they'll degrade much slower.
Where did the seeds all go ?? Did cabbage died during winter and villagers kept planting new ones and they die again ??
And seeds could also rot if not stored properly.
So hard to say what exactly happened to yours.
- You can buy from the merchant or send your own people to buy from other regions but I personally rarely do this. Instead I try to purchase as much as I can from the merchant .
- Try to store them on shelves to make them last longer. Put those shelves priority to the highest so that the seeds and saplings get hauled.
- Train your animals to haul and assign to hauling.
- Once you have created a cold storage, move the shelves down there.
- Make small fields. I like to do 4x4 with 2 tiles gap all around. This will prevent the blight from jumping around.
- Try to plant early in the game and get a crop cycle going. That will ensure a healthy amount of seeds and saplings every year. I always choose someone with high botany skills in the beginning.
