Going Medieval or Noble Fates?

They're rather different. Going Medieval is much more of a classic colony sim. while Noble Fates has a lot of politicking/reputation management. If you really like talking to NPCs and trying to figure out what they like/dislike so you can pick the right conversational topics to make them like you, and keeping track of who that individual has social ties to so that you can manage what those other, not-currently-present people will hear second-hand, go with Noble Fates. If you want more emphasis on building and resource management, stick with Going Medieval.
