That could be quite spectacular.
In this screenshot, I had to build some guide walls on either side of the waterfall to prevent the water from spreading out on to the shoreline at the base of the falls. Granted, mine is only 2 levels high as that was all I wanted in that spot.
If you want to make a waterfall where there was none before, you may have to divert the water to a different part of the map first and then dam up the path you want the water to take, then dig it out as you need and then remove that dam and block off the diversion.
It can be a pain to remove blocks once water floods over them, so if you try making a waterfall, save before starting or removing a diversion.
