Animal training
So should I not train my farm animals all the way up? Once they reach a certain level, my cows just waltz right through the gate of their pen and are getting stuck in my underground mines lmao

As pets they can do lots of carrying for you.
Certain animals can be trained for help in hauling otherwise they tend to get in the way mainly.....as attack animals they are weak but if you do not mind taming some wolves or boars and such....just for the fun of it and the satisfaction of watching enemy soldiers getting gorged or mauled...then that is another worthy way to use some of them....you can find the carrying caps online....cows are the highest if I recall....personally I use mine for selling, breeding and enjoying some nice steaks and beef jerky every so often along with some cold milk....have a few goats and just waiting to get some sheep my map seems to be lacking sheep quite a bit....probably the bandits are shagging them all no doubt.....

Once you train them to Domesticated status you can stop training unless you want them as Pets. Once they become Pets they can open doors and Haul for you (turn on Haul in the Overview tab), but they also eat whatever they come across (not restricted to Troughs) so be careful about having an army of pet hauling goats.
